Story

Followers of the Slim-Fast diet eat 3 snacks, 2 shakes or bars, and 1 “good” healthy meal per day. On its UK website, Slim-Fast offers 31 suggested recipes that its diet followers can use that count as healthy and proper meals.

Since followers of the Slim-Fast Diet can only eat one real meal per day, it is essential that that meal per day be attractive and appetizing.

Otherwise, we think most people would not last long.

In this first post of a new series of articles, we will review one of these 31 recipes: Chile with Red Beans and Pepper. We hope these articles are a useful resource that can help people in two main ways:

First, to help you decide whether the Slim-Fast diet may be
the right diet for you and, if so, to help you decide which foods to eat;

Second, to help anyone looking for inspiration for healthy
and tasty recipe ideas.

The Slim-Fast Recipe for Red Beans and Chili Pepper.

Please note that this recipe serves 2 people.

I have adjusted the recipe description to make it easier to
follow and to clarify in what order the different tasks should be performed.

First, bring the kettle to a boil.

Then, assuming you want to eat chili rice, weigh 25 g (raw
weight) of rice per person. Once the water has boiled, put the rice to cook.

Next, peel 1 onion and 1 garlic clove and remove the seeds
from 1 red pepper. Now chop them all finely.

Heat a medium frying pan with a drizzle of oil. When hot,
add the chopped greens. Cook over low heat for a few minutes, stirring
occasionally.

While the vegetables are cooking, drain and rinse a 400g can
of kidney beans and a 200g can of sweet corn. Use the rest of the boiled water to make 100 ml of vegetable broth. Next, open a 200g can of chopped tomatoes.

When the onion and bell pepper begin to color, add the
beans, sweet corn, broth, and chopped tomatoes, along with a tablespoon of tomato puree, a teaspoon of sugar, and 1 teaspoon. of sweet chili sauce.

Bring everything to a boil, lower the heat and simmer until
the rice is done.

Drain the rice and serve topped with the bean chili, a
tablespoon of low-fat plain yogurt, and chopped fresh chili to taste.

Our verdict on the Slim-Fast Red Bean & Chili Recipe.

I found this recipe surprisingly good, especially for such
an uninspiring ingredient list. The flavor was good, although the textures
seemed too similar to me. For this reason, I would suggest adding something with a little crunch; ideally a low-fat shredded tortilla chips.

I found the food satisfactory; in fact, it managed to fill
me up even though I had just returned from an hour of racing. I would
definitely make this recipe again and give it a "thumbs up".

I estimated the cost of the entire recipe to be around £ 2.60. Since the recipe is enough for 2 servings, this comes down to around £ 1.30 per serving.
