Olive trees have provided food, oil, and medicine for hundreds of years. Which ensures a stable livelihood for generations of people who are currently struggling in many deprived areas. 

Planting an olive tree is a form of Sadaqah Jaariyah - continuous charity for which endless reward will be attained even after death. For every human or animal who benefits from the tree in any way you or your loved one will be rewarded. Olive trees are also greatly valued in islam; olives are mentioned in the Quran and Hadith many times. They are a sunnah food, as well as the oil derived from the being sunnah to use. By planting an olive tree, you will be contributing to reviving the sunnah of the Prophet (SAW) and his companions.
