I have a deep passion for baking. It helps people to relax, unwind and express their feelings. I love the smell of warm, rising cakes fresh from the oven. The sound of the thick, gooey mixture being swirled with a flourish of the wrist.The light, springy touch that tells the baker that her hardwork has finally paid off.The incredible sight of an array of colourful cupcakes, the peachy sponge, the rich brown chocolate or the thick crimson of red velvet. And of course the taste of the ingredients: the brittle crunch of nuts, the tangy zing of lemon, the refreshing bite of fruit, the guilty intensity of chocolate and the simple purity of the classical unforgettable vanilla.
But that's definitely enough about me! What's far more important is to think about children, some as young as my new baby cousin (a couple of weeks old), children who are less fortunate than ourselves. I endure with pain and grief the horrific pictures on television of young, bemused faces yet some of these children are still hopeful. These children are just like us except they have grown up in places with terrible disease and poverty. So I ask one small question: can we hold out our hand to them, wherever they are, whoever they are? As someone once said: 'One Small Step For Man (aka you guys); One Giant Leap For Mankind.'
