I started #coronacooking back in mid March as a way of encouraging people to be creative & a bit bold in the kitchen during the shutdown. A way to encourage & engage people, to give them something to look forward to. As we head into April, I can’t quite believe I’ve posted 50 recipes at this point! The response has been amazing. I’ve received hundreds and hundreds of replies and pictures of the wonderful dishes so many of you have made using my recipes. It has been a joy.
Lots of people have suggested I should do a cookbook - which is a lovely idea and who knows, that may well happen at some stage. For now though, I’m determined to keep at it, and post a recipe a day until the lockdown ends. If you’ve enjoyed the recipes, and can show that appreciation by making a donation to Amnesty International Ireland, I would be enormously grateful.
Even in times of uncertainty, Amnesty will continue to call out human rights violators wherever we see them.
Governments may try to use panic around coronavirus to hide their human rights violations. They should know that we are watching them.
